Lemon Raspberry Protein Muffins



Lemon Raspberry Protein Muffins

(These are flourless protein muffins with around 9 grams of protein per muffin. A great breakfast on the go or post workout snack)


Ingredients: 1/2 cup vanilla protein powder (or use chocolate for a little extra flavour!)

1/2 cup almond meal 

2 tbsp flaxseed (optional) 

2 tsp cinnamon

2 tsp baking powder

1 tsp lemon zest

1/4 tsp salt

1/2 cup egg whites

1/2 cup plain greek yoghurt

2 bananas (as ripe as possible, mashed)

4 tbsp coconut oil, melted

1 cup fresh or frozen raspberries (if frozen, be sure to pat them try to remove moisture)


Method:

Preheat oven to 180 degrees celsius


Spray a muffin tin with coconut oil or line with patty pans


In a mixing bowl add protein powder, 1/2 cup almond meal, flaxseed, cinnamon, baking powder, lemon zestand salt. White together and set aside.


In a separate bowl add egg white, yoghurt, mashed bananas, and melted coconut oil.


Whisk together until well combined.


Pour wet ingredients into dry and mix well using a spatula.


Gently fold in raspberries then divide muffin mix evenly among muffin tins (should fill up around 10-12 tins)


Bake for 25-30 minutes until golden and stick come outs "clean"


Enjoy!

Store in an airtight container or zip lock bag, or freeze and grab out when needed!
