PRE/POST WORKOUT 10-MINUTE THAI BEEF SALAD



This recipe has to be one of my favourites, for a number of reasons.

Firstly, it's ridiculously quick and easy, it's packed full of flavour, it's nutritious, affordable, fresh AND you don't need a thousand ingredients. TICK, TICK AND TICK!

A great pre/post workout go to.

Cook up a bigger batch and you have yourself a fab lunch the next day!

(Serves 4)


INGREDIENTS

2 tsp sesame oil 2 tsp soy sauce 500g sliced grass-fed beef rump steak 125g Thai-style rice noodles 150g mixed salad leaves 5-6 baby cucumbers (finely sliced lengthways) 250g cherry tomatoes 1/3 cup chilli (finely sliced) & lime juice vinaigrette

To serve: Crushed unsalted peanuts Finely sliced red chilli Fresh mint

METHOD

Combine soy sauce and oil in a bowl and rub over beef pieces

Heat pan on medium-high then add beef- Cook for roughly 2 minutes or until cooked to your liking - Put on plate and rest aside

Place noodles in a heatproof bowl and cover with boiling water - Let sit for roughly 3 minutes or until tender

Drain noodles then run under cold water through strainer to remove liquid

Place all salad ingredients (tomato, cucumber, salad leaves) in a large serving dish

Add beef, noodles and vinaigrette to salad mix and toss all together Garnish with mint, chilli and peanuts


VOILA! 

You are done!
