Buckwheat Pancakes

Ingredients: 1 cup buckwheat flour 1/2 mashed banana 1 3/4 cup of light coconut milk pinch of salt 1 tbsp melted coconut oil (plus a bit more for cooking) pinch of cinnamon natural maple syrup (to taste - this is both the sweetener within the mix and also a drizzle is used when served)

Fresh berries to serve


1. Mix all ingredients. Heat pan and cook 1/4 cup of batter at a time. Flip when bubbles appear.

2. Serve with a drizzle of maple syrup and fresh berries.
